The benefits of sprouting sorrel for use as a microgreen rivals those of radish sprouts, all for the same reasons. For the garden grower, Sorrel is prized for it’s heat tolerance, it’s flavor match to spinach, it’s nutritional value and for the fact that it produces throughout all of the seasons, only to slow upon frost. Grow sorrel in the summer heat and enjoy using the large leaves in salads, soups and anything you would use spinach in. When the leaves are young they have a refreshing lemony flavor to them. While the flowers are pretty, cut them off when you see them bolt up in order to keep the plants energy directed towards producing more leaves. Germination instructions: Sorrel seeds need sunlight to germinate. So you’ll want to sow them by pressing them snugly into the moist surface of the soil while also taking care that they don’t bury into the darkness of the soil when watering.
