Microgreens, like most other superfoods that are consumed fresh, begin to lose their nutritional value rapidly after harvest. Consider growing your own microgreens at home as this will allow you to decide exactly when you harvest your crop. Microgreens are young vegetable greens that are approximately 1–3 inches (2.5–7.5 cm) tall. They have an aromatic flavor and concentrated nutrient content and come in a variety of colors and textures. Microgreens are considered baby plants, falling somewhere between a sprout and baby green. Red Radish microgreens are a bit different. They are bigger and have a powerful peppery flavor. But they have the same amount of cancer fighting chemicals as broccoli.
