Pressing and Storing Apple Cider

Drop apples, the pasteurizing temperature the sources argue about, and the tested process for canning cider.

Apples

Do not press windfalls. That is the single decision that matters most in home cider, and five extension services say it in nearly identical words. Iowa State, Oregon State, Penn State, the University of Maine and University of Missouri IPM all say use tree-picked fruit only, because apples that have touched the ground may carry E. coli from livestock, wildlife or bird droppings.

The reason to take that seriously is a body count rather than a theory. CDC’s MMWR records an October 1996 Connecticut outbreak of E. coli O157:H7 traced to unpasteurized cider from a small mill that used drop apples: 14 cases and 5 hospitalizations, including hemolytic uremic syndrome. The same report covers a Cryptosporidium outbreak in New York that same fall, 31 cases across 19 households, from a mill that avoided drops but had E. coli in its well water.

Washing does not fix it. FDA is explicit that cleaning and culling are required steps that do not substitute for a pathogen treatment. Nebraska Extension describes washing as a step that lowers bacterial, yeast and mold counts and buys shelf life, which is a quality benefit rather than a kill step.

Cull hard. Rotten and moldy apples carry patulin, a mold toxin, and FDA’s action level in apple juice is 50 micrograms per kilogram. Heat does not solve that one either, because FDA states that thermal processing does not destroy patulin. A moldy apple that goes through the press is still a problem after pasteurizing.

Blending and yield

Missouri’s traditional sweet cider blend is equal parts Golden Delicious, Red Delicious and Jonathan, with an astringent variety added at 10 to 20 percent of the blend if you want one. Iowa State frames the same choice as sweet against tart, with Gala or Fuji on one side and McIntosh or Pink Lady on the other. Wisconsin Extension explains why blending is the norm rather than a refinement, noting that the right levels of acid and tannin are very rarely found together in any single variety.

Yield runs about three gallons per bushel, a figure both Iowa State and Missouri give. Missouri puts a bushel at roughly 42 pounds.

Pasteurizing, and the numbers that disagree

Every source says heat it. They do not agree on the target. Oregon State says 160 degrees held for six seconds. The University of Maine says 155 degrees for ten seconds, which is also Maine state law for cider sold without an unpasteurized label. Iowa State and Washington State both say 160 with no hold time given, and Missouri says 160 to 185.

That looks worse than it is. A 155-for-10 process and a 160-for-6 process are close to thermally equivalent, and the 185 figure is a canning temperature that got folded into a pasteurizing sentence. Heat to 160 and hold it briefly, with a thermometer in the pot instead of a guess about when simmering starts.

What the heat is for is a 5-log reduction, which FDA defines as a hundred-thousand-fold cut in pathogens. Cider’s acidity is not a substitute for it. E. coli O157:H7 and Cryptosporidium both caused documented outbreaks in cider at its natural pH, which is exactly why the treatment requirement exists in the first place.

Ozone and UV come up as alternatives. Neither belongs in a home kitchen. CDC’s investigation of a 2003 northeast Ohio Cryptosporidium outbreak, 23 confirmed and 121 probable cases, found illness among people who drank once-ozonated and twice-ozonated cider alike, and concluded that repeated ozonation was inadequate. UV is legal under 21 CFR 179.39, but only with turbulent flow through tubes at a Reynolds number of at least 2,200, which is a plumbing specification no home rig meets.

Storage

Refrigerated shelf life is the widest disagreement in the whole subject. Iowa State and Washington State say five days. Oregon State says seven days for raw cider in one publication and about a week in another. Nebraska says about two weeks at 42 degrees or below for unpreserved cider, and Missouri says about three weeks for pasteurized. Most of that spread resolves once you sort which numbers describe raw cider and which describe pasteurized cider held cold. Plan on a week for raw, and hold it at 42 or below.

Freezing is the practical answer for volume. Oregon State says freeze in moisture-vapor-resistant containers with two inches of headspace in glass or plastic jars. That is larger than the NCHFP general liquid-pack figure of half an inch for pints and one inch for quarts, and the reason is that straight juice expands more than fruit packed in syrup does. Take the two-inch number for cider and store at zero degrees or below.

For canning, the tested process belongs to NCHFP, adapted from USDA. Refrigerate the juice 24 to 48 hours, pour off the clear liquid without disturbing the sediment, and strain it through a paper coffee filter or damp doubled cheesecloth. Heat to a boil. Fill sterile pints or quarts to a quarter inch of headspace, then process in a boiling water canner for 5 minutes up to 1,000 feet, 10 minutes from 1,001 to 6,000 feet and 15 minutes above that. Half-gallon jars take 10, 15 and 20 minutes across the same altitude bands. Hot-fill-and-invert is not a tested process for this.

Preservatives are a shelf-life tool and nothing more. Nebraska Extension is precise about the limit: potassium sorbate controls yeasts and molds but does not control E. coli O157:H7. Sodium benzoate at 0.05 to 0.1 percent by weight does suppress E. coli growth and adds a week or two, which still is not a treatment.

Sanitize the press, the grinder, the cloths and every container that touches juice. Iowa State, Oregon State and Maine all give the same dilution of one tablespoon of household bleach per gallon of water, with Iowa State specifying at least a minute of contact time. Penn State singles out press cloths for daily washing, rinsing, sanitizing and drying, which is the step people skip because a cloth can look clean when it is not.

One last thing worth knowing. Cider that has started to ferment on its own has not become safe. Fermentation raises acidity, which Oregon State notes in the context of canning fermented cider, and nothing in the tested literature treats yeast activity as a pathogen control. If it was raw when it went into the jug, it is raw now.
